What type of green salad pairs well with a Mexican dinner? A salad with cilantro, lime, corn and avocados, of course!
1/3 cup olive oil
1/4 cup freshly squeezed lime juice
2 Tablespoons red wine vinegar
3 Tablespoons honey
1/4 cup chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon black pepper
one head of green leaf lettuce, washed, spun dry, and chopped
1 cup frozen corn, thawed (of course, you can use fresh corn if it's available)
1 cup halved cherry tomatoes
1 cup chopped cucumbers
1/4 - 1/2 cup fresh cilantro
1 avocado, diced
In a small food processor, combine first seven ingredients: olive oil through black pepper. Blend thoroughly until cilantro is fully pulverized.
In a salad bowl, add remaining salad ingredients: lettuce through avocado.
Just before serving, add dressing to salad and toss to combine.
