Turkey Black Bean Wraps

I love one-pot meals like this wrap recipe. You chop up a few ingredients and put everything into the pot together and, minutes later, dinner is ready. When I have cooked turkey on hand, this is one of the simplest and fastest meals I make.

Turkey Black Bean Wraps

(serves 5-6)

2 medium tomatoes, chopped
1 can (approx 15 oz.) black beans, drained and rinsed
1 can (approx 4 oz.) mild diced green chiles
4 green onions -- green and white parts -- sliced
1/3 cup chopped cilantro
4 cups (approximately) cooked, chopped turkey
1/2 cup water
1 package (approx 1.25 oz.) fajita spices -- OR -- make your own fajita spice mixture:

  • 1 tablespoon chili powder

  • 1 ½ teaspoons paprika

  • 2 teaspoons sugar

  • 1 ½ teaspoons onion powder

  • 1 teaspoon garlic powder

  • ¾ teaspoon cumin

  • ½ teaspoon cayenne

  • ¾ teaspoon salt

If making your own fajita spice mixture, combine all spice ingredients together in a small bowl. Next, add all remaining ingredients including the spice mixture to a large pot (I use a wok). Heat over medium-high heat until the mixture is warmed through, about five minutes.

Serve with:

  • chopped romaine lettuce

  • shredded cheese

  • sliced avocados

  • sour cream

  • salsa or hot sauce

  • flour tortillas
