Fajitas
Why buy a seasoning packet from the store, when you can use spices that you likely have on hand to make your own?
Fajita Spice Mix
1 ½ tablespoons chili powder
1 tablespoon white sugar
2 teaspoons paprika
2 teaspoons onion powder
1 ½ teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon sea salt
3/4 teaspoon cayenne
Mix all ingredients together in a small bowl.
Fajita ingredients
1/2 of a medium yellow onion
3 bell peppers, any color
2 chicken breasts, cooked and thinly sliced
one tomato, cut into wedges
6" flour or corn tortillas
sour cream
shredded cheese
chopped lettuce
avocado slices or guacamole
salsa
Sprinkle a little MCT oil in a large wok or skillet. Add onion and cook for two minutes. Add bell peppers and cook for three more minutes. Sprinkle with half of the fajita spices and stir to combine. Add sliced chicken breast, tomato wedges and remaining fajita spices. Stir to combine. Add a few tablespoons of water if the mixture looks dry. Continue stirring and cooking just until warmed through. Serve with tortillas, sour cream, shredded cheese, lettuce, avocado/guacamole and salsa.
