This is restaurant quality delicious. If I cooked meals like this one every night, my husband would never want to eat out!
I recommend cooking this dish with ghee instead of butter, because we're cooking over high heat and ghee has a higher smoke point than butter.
1 tablespoon paprika or smoked paprika
1 tablespoon onion powder
1 teaspoon cayenne
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2-4 tablespoons ghee
Mix all spices together in a small bowl (everything except ghee).
Cut 1.5 pounds of salmon fillets into 4-6 pieces. Melt 2 tablespoons of ghee in a cast iron skillet over high heat. Use half the spice blend to sprinkle evenly over one side of all fillet pieces. When skillet is hot and ghee is melted, place salmon seasoned side down and cook for 4 minutes. Just before flipping, sprinkle remaining spice blend on salmon. If needed, add 1-2 more tablespoons ghee. Flip salmon and cook for 3 minutes until center is cooked through.
Note: I prefer to cook this outdoors on the side burner of my Weber grill. Salmon is stinky (duh); also, cooking fatty salmon in ghee on high heat will set off most smoke detectors.
